Gulkand Pudding Recipe

Gulkand Pudding is a smooth, chilled dessert made with coconut milk, rose flavours, and the richness of gulkand. It has a soft texture with a gentle sweetness and a light floral touch from rose petals and fennel. This signature dessert by Mr Paanwala is a great choice when you want something calm, refreshing, and easy to prepare at home.

Ingredients

  • 2 cups coconut milk
  • 30 g cornflour
  • 1 tablespoon fine sugar
  • 2 teaspoons fennel seed powder
  • 2½ tablespoons rose syrup
  • 3 tablespoons gulkand
  • 1 tablespoon dried rose petals

How to Make Gulkand Pudding

  • Step 1: Heat the Base
    Pour coconut milk into a pan and heat it on medium flame.
  • Step 2: Mix Cornflour and Sugar
    Add cornflour and sugar while stirring continuously to prevent lumps from forming.
  • Step 3: Add Flavours
    Mix in fennel seed powder and rose syrup. Stir well to combine.
  • Step 4: Add Gulkand
    Add gulkand and dried rose petals. Keep stirring.
  • Step 5: Cook Until Thick
    Continue cooking on medium heat, stirring all the time, until the mixture thickens to a smooth, semi-solid texture.
  • Step 6: Set the Pudding
    Remove from the heat and pour the mixture into a mould of your choice.
  • Step 7: Chill
    Refrigerate for about 3 hours until fully set.
  • Step 8: Unmould
    Once set, gently remove the pudding onto a serving plate.

Garnish

  • Pistachios
  • 1 teaspoon gulkand
  • A few dried rose petals
