Strawberry Gulkand Mousse is a light and creamy dessert with a pleasant mix of fruity freshness and the gentle sweetness of gulkand. Ingredients

  • 600 gm strawberries
  • 4 tbsp sugar
  • 2 tbsp water
  • 2 tsp lime juice
  • 2 tbsp gulkand
  • 2 tsp fennel seed powder
  • 1 tsp agar agar
  • 1.5 cups whipping cream
  • 10 tbsp strawberry compote

How to Make Strawberry Gulkand Mousse

  • Step 1: Prepare the Strawberries
    Wash the strawberries well and cut them into small pieces. Grind them into a smooth puree.
  • Step 2: Prepare Agar Agar
    Soak the agar agar in 2 tablespoons of warm water to activate it.
  • Step 3: Cook the Strawberry Base
    Strain the strawberry puree into a pan and place it on medium heat. Add sugar, gulkand, fennel seed powder, and the activated agar agar. Cook for about 10 to 12 minutes until slightly thickened.
  • Step 4: Whip the Cream
    Beat the whipping cream for about 3 minutes until it becomes light and fluffy.
  • Step 5: Mix the Compote
    Add half of the strawberry compote to the whipped cream and beat again for another 3 minutes. Transfer this mixture into a piping bag.
  • Step 6: Layer the Mousse
    Take a glass jar and add about 1.5 teaspoons of gulkand at the bottom. Pipe the cream mixture until the jar is halfway full. Add 1 tablespoon of strawberry compote, then pipe another layer of the cream mixture on top.
  • Step 7: Chill
    Place the jars in the refrigerator for about 3 hours so the mousse can set properly.
  • Step 8: Garnish and Serve
    Top with fresh strawberry pieces before serving.
